They have zoned heating so that the top of the oven is hotter than the bottom. They are good for traditional cooking: roasts, fruit cakes and bread.

-          Fan ovens incorporate a fan which circulates the heat more evenly. Cooking is quicker and the color more even, if paler and less glossy. Pre-heating is usually unnecessary as is the repositioning of shelves or swapping trays halfway through cooking. But the food may be drier and less crisp.

-          Multifunction ovens provide a combination of fan and conventional heating in one oven.

-          Gas is a moister form of heat than electric, particularly noticeable in baking. The temperature in the middle of the oven relates to the selected gas mark. The top shelf is slightly hotter and lower shelf slightly cooler, great for cooking items that require different temperatures.

-          There are gas fan ovens that combine moister cooking with the speed of fan cooking.

-          A new technology is the accelerated cooking System (ACS) which uses microwave energy to reduce cooking times drastically.

-          Free standing cookers are available that combine a gas hob with an electric oven and grill (one manufacturer also has a gas grill), to compete with the versatility of built-in appliances.
